June 2022 was also about 2 months since I officially dropped everything in my Oil & Gas career and went full-time into smoking briskets.

Money, Greed, Power - I‘ve witnessed how humans can showcase their ugliest side for these 3 words. 👿

I’m someone who always believe in the good of people which resulted in me being such a dumbass. 😂

To the extent that 2 of my friends say they won’t let their kids watch Disney, coz later their kids turn out to be like me. #truestory

Well, I was of course jaded and disheartened with the people and issues I’ve encountered, as if the world has turned its back on me.

Today, as I reflect on my journey with the youths, I am filled with gratitude to the people who lifted me up when I was at my lowest, reminding me that there are still kind people around me.

Thank you to all my friends who let me lie on their sofas to space out, drag me out of the house, sending me soup and home-cooked meals.

I will never forget such kindness and generosity!

You guys have restored my faith in humanity, reminding me that genuine acts of kindness can heal even the deepest wounds. ❤️‍🩹

Remember, you are never alone and while it’s natural to experience grief and setbacks, we must never allow ourselves to remain trapped in a perpetual state of sadness! There’s always another perspective and inject some fun & humor to it!

Hope you will be able to find joy in the simplest of things and make a positive impact on people around us.

Not all briskets are created equal. I may be the only crazy person that started the trend of smoking brisket for more than 18 hours, but trust me, the end result is worth every minute.

People have asked me why I can’t just set it and forget it, but smoking brisket with FIRE is an art that requires constant attention. 🔥

From manually feeding the wood logs to monitoring the air flow, temperature, and so many other factors, every step is crucial to achieving the perfect texture and flavor.

I always need to be on high vigilant mode. 🚨

And it’s not just about salt and pepper - there’s so much labor and science behind it that makes the food truly amazing.

End of the day, it’s all about the passion, dedication, and love for the craft. And when you take that first bite of juicy, perfectly smoked brisket, you will understand why.

Recently, I found myself considering going back to corporate career or taking a flexi-master’s program.

But this.. this very video of me messing around with fire while flambéing the smoked chicken, basically reignited my excitement for it again. Totally love the adrenaline rush!

I truly love experimenting, trying out new ingredients and techniques. Every dish was a challenge, but also a reminder of the joy and passion that I live for.

I'm honored to have been invited by Girl Guides Si

I'm honored to have been invited by Girl Guides Singapore to speak to their girls about overcoming leadership barriers. As a former Girl Guide myself, it was truly special to come back to this association 20 years later and share my personal experiences. 👧🏻

During the talk, I conducted an interactive live poll on the inequalities faced by these girls, and the results were disheartening. It's unfortunate that girls at such a young age are already grappling with issues like fat shaming and gender inequality.

Despite the challenges and setbacks I've faced in my own journey, I never gave up on my dreams. I turned my negative experiences into positive energy, and it has made me a stronger, more resilient person.

I encouraged the girls to do the same and to never let anyone dim their light. We must send a powerful message to these mean and unkind people and, most importantly, to ourselves, that we are worth more than their judgments.

I personally also want to take a moment to address those who may find me inspirational and aspire to be like me.

While I appreciate your admiration, I hope that you do not have to go through the same tough times that I have faced in my life. 🥲

I want to thank Girl Guides Singapore for providing such a fantastic platform to inspire the next generation. Remember, we can all be leaders in our own right. 🔥

Here’s a video to show you how many slices of briskets there are in each of our 500g packs! 🔥

Every cow is different just like you and me, so the raw briskets received are unique and of different sizes. 🐮

For the big ones, it can be only 2 to 3 slices and already more than 500g.

The average serving portion at restaurants and cafes are about 60g to 100g each, so 500g packs can feed 5 to 8 pax depending on your serving size (and the carbs you pair with)!

Do note all our smoked meats are sold POST-SMOKED weight and after shrinkage.

Please be assured that all our packed meats are definitely more than or equal to the stated weight. Coz I weigh and pack them myself personally!

Wow, what a night! I am beyond grateful and humble

Wow, what a night! I am beyond grateful and humbled to have been invited to the Asia’s 50 Best Restaurants 2023 (@theworlds50best) after party! 🎉

Being surrounded by some of the world’s most talented chefs and culinary experts was truly an eye-opener experience! I had the opportunity to chat and learn from them, and I feel so lucky to have been able to do so.

I’ll admit, I felt a little (or very) out of place at first - I mean, these people here are the best of the best!!! 🌟

But as the night went on, I realized that everyone there was just passionate about food and filled with so much enthusiasm and energy!

I was fangirling over chefs like @andrechiang_sg and @littlebaomay, regretted not having enough courage to say hi to them! 😢

The BEST smoked beans you’ll ever tried!!!

This dish has converted many people who doesn’t like beans to addicts (I mean smoked beans addicts!) 😂

An original creation where I added chickpeas and other secret spices and smoked it for more than 16 hours infused with brisket drippings!

One of my favorite ways is to pair with mozzarella cheese and taco chips. Seriously the best combo ever. 😋

Rempapa x SGBrisket Smoked Brisket

We have taken the traditional American BBQ and gave it a unique twist with Rempapa’s (@rempapasg) famous aPeranakan rub, which is made entirely from scratch!

The brisket spice rub is beautifully crafted by the legendary Chef Damian (@the_rebel_chef) and Rempapa’s Head Chef Alan (@malaccamakanking) !

Slow smoked for over 22 hours with Post-Oak & Hickory wood logs and charcoal, a one-of-a-kind dish you do not want to miss!

PS: the fragrance of the spice rub is so strong that I have to deep clean my smoker before I can smoke anything else, and I’m not even mad about it because it smells so heavenly!!!! 🤤

Also, there will be smoked beans & chickpeas smoked with the drippings of these amazing Peranakan style briskets!

Hi everyone!
I just wanted to take a moment to express my sincere gratitude to all of you who have supported my small business.

Smoking meat has been my passion for years, but it's not an easy road. 🔥

Many people don't realise the amount of hard work that goes into creating the perfect smoked brisket, pork butt, or rack of ribs.

I've spent thousands of hours experimenting with different techniques, perfecting my recipes, and learning how to balance the flavors just right.

And while it's incredibly rewarding to see people enjoy my food, there are some tough challenges too.

The long hours on my feet, heavy lifting, and inhaling smoke while loading in wood logs in a small enclosed kitchen can be tough on my health. 😷

But I don't let that stop me.

As someone with a background in oil and gas, where I specialised in identifying and mitigating harmful emissions from marine vessels, locomotives, military tanks, and more, I am fully aware of the health risks associated with smoking meat in such a tiny enclosed space.

But I am always striving to find ways to make my process safer and healthier.

And with the support of my local community, I'm able to keep doing what I love.

So thank you again for supporting my small business, for valuing local, artisanal food, and for understanding the hard work and passion that goes into every single bite.

HAPPY FIRST YEAR ANNIVERSARY, @rempapasg ! 🎂 🥳

Such an honor to be able to work together with Chef Damian, Chef Alan, Chef Chitpang, and the entire team at Rempapa for their first year anniversary.

Always wanted to infuse local flavors with American style smoking techniques and finally got the opportunity to do it!

We did a smoked brisket using Rempapa’s signature Peranakan rub for over 22 hours with post-oak and hickory wood. And the myriad of flavors were so amazing!

Thank you all for coming down today and can’t wait to see you guys for the next upcoming collab! 🙏
